Ingredients
- 1 EverCrisp® apple, chopped
- 1 x 15 oz. can cannellini beans, rinsed and drained
- 1 cup broccoli slaw
- ½ avocado, diced
- 2 x 6 oz. chicken breasts, grilled with paprika, salt, and pepper
- 1 Tbsp pepitas
- 2 Tbsp olive oil
- ¼ cup apple cider vinegar
- ¼ tsp salt
- To garnish: fresh cilantro
Directions
- Add apple, beans, broccoli slaw, avocado, pepitas, and chicken to a bowl.
- To make the dressing: whisk together olive oil, apple cider vinegar, salt, and pepper.
- Dress salad and garnish with fresh cilantro.
